Black Bean Enchilada Pie

Black Bean Enchilada Pie

1 ½ c dry black beans, cooked 1 lg. onion, chopped

1 can cream of chicken soup 1 can cream of mushroom soup

4 oz. diced green chilies 8 oz. mild enchilada sauce

¾ c. milk 1 pkg. soft tortillas

½ lb. cheddar cheese, grated ½ lb. Monterrey Jack cheese, grated

1 pint sour cream

Mix beans, onion, soups, chilies, enchilada sauce and milk. Place 6 tortillas in greased 9x13 pan. Top with half the bean mixture and half the cheeses. Repeat the layers. Bake at 350 degrees for 40 min. Cool slightly & cut in squares. Top with sour cream.
