Leighann's Whole Wheat and Flax Bread

Perfect, Healthy Homemade WHEAT Bread!

This bread is SO easy, it's hard to find an excuse NOT to make your own bread! (And it's a hit with the family as well!) Thanks to Marie Johnson for the recipe (she created it and has perfected it over the years)!

5 cups hot tap water
½ cup honey
3 TBSP. Lemon Juice
½ cup vital wheat gluten
1 cup ground flax seed
10-11 cups whole wheat flour
2 ½ TBSP SAF Instant yeast
¼ cup oil
1 TBSP. Salt

Mixer with a dough hook

Pour hot tap water into mixer bowl. Add honey, lemon juice, gluten, flax seed and 4 cups flour. Mix until flour is wet. Add yeast and mix for 15 seconds on low. Add oil and salt. Turn mixer to low and add flour until dough forms a ball and starts to clean the sides of the bowl (it will still look a bit sticky). Mix on Medium speed for 6 minutes until dough is smooth and elastic.

Turn dough onto oiled surface. With oiled hands, form dough into 4 or 5 loaves. Put loaves into greased pans and place in oven for 30-40 minutes to rise until double. Leaving bread in oven turn oven to 350° and bake for 35 minutes. Bread is done when top crust is browned and loaf has a hollow sound when “thumped.”
